Thai Baked Salmon

Ingredients
- 2 Salmon fillets (preferably wild or organic)
- 2 tbsp fish broth
- 1 tbsp olive oil
- ½ tbsp. Fish sauce
- 1 tbsp tamari (Japanese Soy sauce)
- ½ tbsp honey (preferably raw)
Shepherd’s Pie With A Twist
Ingredients
- 1 large white onion, chopped finely
- 2 carrots chopped finely
- 1 celery stick chopped finely
- 2 cloves garlic, minced
- 500g lean minced lamb (You could use beef also to make a Cottage Pie)
- 500ml chicken/beef/veg stock
Poached Chicken

This is an incredibly easy dish to cook. Apart from a bit of chopping at the start and a lot of eating at the end, there’s not much to do!
It’s a very soothing meal and a favourite of mine if I’m feeling a bit under the weather or at the merest hint of a cold to boost the immune system.
Ingredients
- 1 Whole chicken approx. 2 kg (organic, free range recommended)
- 6 small Carrots or 2-3 large chopped
